taurant now open In early September it was time for Hedda Spendrup’s Omaka to pull back the curtain and reveal what had been in the works for the last five years. “Ever since the brewery was finalised I have been looking forward to opening the restaurant. Now it’s finally time, I feel incredibly nervous,” says Hedda Spendrup, brewmaster at Omaka. “The aim with the restaurant is to create a place where friends and guests want to hang out all the time, without ever getting tired of it.” The food is being looked after by Christian Siberg, previously a finalist in the Årets Kock (chef of the year) competition. “My cooking is far from standard fare, which you will see in our menu. Many of our dishes are created to match Omaka’s beers, but Hedda can also brew a beer to match a specific dish. It gives our guests a more interesting and complex experience”. Omaka is located at Uggelviksgatan 2 in the city centre and is open at night time, Monday through Saturday. Two of Omaka’s beers, Svartskog and Peppar, peppar, have also been released at Systembolaget with a third to follow in October. New supermarket, complete with bar and bistro ICA Kvantum Södermalm, a 2,300 square metre supermarket and bistro will open at Magnus Ladulåsgatan 40 on October 14. This new grocery store is the first ICA Kvantum on Södermalm and has twice the amount of space as the average inner city store. In its bistro section they will serve food with seasonal raw produce, and aim to minimize and recycle their food waste, as well as offering carefully-chosen beers and wines. “What we serve will, to as great a degree as possible, come from our grocery store, it’s a step towards reducing food waste. We want to make it easy for the people of Södermalm to make the right call and to inspire more sustainable choices,” Thomas Bergman at ICA Kvantum Södermalm says. Apart from a zero-waste vision, ICA Kvantum Södermalm also has the ambition to offer the largest organic and locally-produced supply of food in Stockholm. And in another step in the sustainable direction, they have recruited Joakim Mets, previously the store manager for the former organic grocery store Paradiset.
