y A WALK ACROSS THE ROOF TOPS Boasting spectacular panoramic views with a 360° wraparound taking in the iconic Dublin skyline, The Rooftop Bar & Terrace at Anantara The Marker Dublin recently reopened with a stylish new look. Located in the building designed by renowned Portuguese architect Aires Mateus, the warm, inviting space now includes a cosy fire-pit, with new low-slung seating and chic high bar stools. At the heart of the experience is a stunning new menu from Executive Chef Gareth Mullins, which fuses bold Thai and Asian flavours with fine Irish ingredients. Ideal for sharing, the gorgeous menu of inspired small plates showcases such delicious ingredients as lemongrass, chilli, lime, and coconut, and is nicely complemented by a thoughtful choice of cocktails. At time of writing The Rooftop Bar & Terrace was open Wed to Sunday, with plans to extend hours and open daily, depending on the vagaries of the Irish summer. We’re told that the coffee grounds are slowly steeped in cool water, which helps gently extract flavours from the bean, and results in less acidity, a richer flavour and a smoother taste. In all, the process takes twelve hours and results in a cold brew that is 60 per cent less bitter than chilled espresso typically used in iced coffees or lattes. According to the brand’s Commercial Director, Sheila Dowling, “Very few places are doing cold brew right in Ireland, certainly not at this scale. This cold brew is single origin, balanced and has already been formulated to the perfect way of serving, so that it just has to be served to the correct measure. It can be enjoyed black or as a premium iced latte with your preferred choice of milk.” A serving of this Colombian Fairtrade cold brew is entirely free from additives and costs between €4.50 and €5.50, depending on optional extras, such as milk and syrups. bewleys.com 32 STRAWBERRY BEDS With strawberry season in full bloom, Bord Bia has launched a campaign with local growers to encourage folks to celebrate the season and incorporate the tasty berry into a variety of meals this summer.
