iar, champagne and a dry martini-heavy cocktail menu at Scandinavia’s first caviar showroom. Words: Pelle Tamleht For the past couple of months, Stockholmers, as well as touristing visitors, have had the chance to enjoy setmenus with caviar and vendace roe at Quality Caviar Showroom at Sturegatan 20. “Our aim has been to create Scandinavia’s centre for caviar, a place where you get to know a lot more about this delicious premium product. That’s why we are so incredibly proud to have the broadest range of roe and caviar,” says Carol Chmaissani, founder and caviar expert. As head of gastronomy they have recruited Anders Isaksson, who has returned to Sweden after many years of work abroad, at a two star restaurant in Paris among other things. Apart from experience in international restaurants, he has also competed with the Swedish national chef team and is now on the Swedish Bocuse d’Or team that will compete in the 2023 World Championship. “With the passion we and Anders share for premium caviar and vendace roe, we have created a fantastic taste experience,” says David Gard who is founder and head of quality control at Quality Caviar Stockholm. 6 On the drinks side of things, we find another heavyweight in the shape of Andres Leon, who has created a cocktail menu centred around dry martini. “We prioritise clean tastes, that don’t need too much room,” Andres explains. Apart from cocktails, the menu is unsurprisingly heavy on champagne and vodka. The showroom has a few bookable tables, for parties of four, but also offers a string of bar seats for drop-in guests. They offer smaller dishes as well as snacks and a set menu. Those without the time for a long sitting can always just swing by and grab a couple of quick canapés on the go, or alternatively enjoy a glass from the caviar fridge. Quality Caviar Stockholm was launched in 2019 by Gard and Chmaissani. The company offers a broad range of caviar and vendace roe of the best quality, and all products are delivered straight from the source, after being tested and examined by the owners. Quality Caviar Stockholm is one of the only brands in Sweden licensed by the Swedish Board of Agriculture to repack and grade sturgeon caviar. The showroom opening times are Wednesday-Friday 16:00-00:00 and Saturday 17:00-00:00. Their shop is open weekdays between 11:00 and 18:00 plus Saturdays 12:00-17:00. This is caviar Caviar is made up of salted and sometimes smoked fish roe from sturgeon. Traditionally the term was only used when talking about roe from wild sturgeon from the Caspian and Black Sea. Depending on the country caviar can also refer to roe from other fish, such as salmon. The raw produce is generally served on spoons made of mother-of-pearl, to avoid distorting the taste of the caviar. In Sweden, the term is also used more broadly about processed sandwich caviar, made from cod roe.
