rns restaurants and chefs The second edition of Tugg festival at Teatern, the food market at Ringen in Skanstull, is going ahead in early October. In connection with this, acclaimed chef Mathias Dahlgren is opening up an exclusive pop-up restaurant in the same location. The dishes on the menu are comprised of the chef’s own personal interpretations of meals from around Södermalm. The result, consisting of everything from charcoal-grilled food to fried herring with mashed potatoes, is described as a celebration of the gems of Södermalm fast food. “Södermalm offers fantastic fast food and in my work with the menu I have interpreted some of my personal favourites. The dishes I have created capture the essence of the originals, but also give the restaurant-goers new experiences in the form of raw produce, textures and tasting combinations,” Mathias Dahlgren explains. The restaurants that are being interpreted are Amida Kolgrill at Folkungagatan, Strömmingsvagnen (The Herring Wagon) at Slussen and Thongwiset in Hornstull. The idea behind Södermalm by Mathias Dahlgren is to flip the concept and see what happens when a Michelin-starred chef is inspired by, and interprets, classic fast food. During the food festival Tugg, Ringens Centrum will, apart from Mathias Dahlgren’s temporary menu, offer visitors various types of food and drinks tastings, workshops and an exclusive tasting menu 20 with dishes from all nine of the restaurants at the Teatern food court. “We’re incredibly proud to be able to present Mathias Dahlgren as a collaborator during this year’s food festival. His interpretations of Södermalm classics have resulted in three incredibly exciting dishes that we believe the visitors of Tugg will enjoy,” says Tina Landelius, head of communications at AMF Fastigheter who run Ringens Centrum and Tugg.
