A TASTE OF PERU AT ZAMPAS Zampas, the Peruvian in
spired restaurant at the heart of the Hard Rock Hotel, opened in late February, only to close again within a matter of weeks as the Coronavirus began to make its mark. Head Chef Stuart Heeney oversees its return with a stunning menu featuring pre-dinner snacks of wild, locally landed white fish ceviche, followed by a choice of Peruvian-style roast chicken from the asador or a 28-day dry-aged ribeye from John Stone’s artisan butchers. In the period since, it has been busy invigorating the Irish whiskey scene, while carrying off a vat load of international awards, including the prestigious World’s Best Whiskey Visitor Attraction. The Distillery has just re-opened under the stewardship of Lisa Jameson, recently voted the World’s Best Distillery Visitor Centre Manager.
