WORDS Adhamh O’Caoimh HAWKSMOOR x WATERFORD WHISK
EY High end steakhouse Hawksmoor partnered with Waterford Whiskey before opening their doors in Ireland, even conspiring to craft their near €400 bottle of Blackcastle 1.1, which is well regarded by enthusiasts. On Sunday March 17th, diners can enjoy a three course meal at the stunning Hawksmoor Dublin restaurant, served family style with pairings of Waterford Whiskey selections, curated and discussed by Waterford Whiskey head distiller, Neil Conway. At €129 per ticket, it may not be the cheapest evening out in the city, but we reckon that the actual value for money involved makes it an intriguing proposition all the same. A decadent evening of conversation and celebration on St. Patrick’s Day, for those who want something extravagant, instead of merely excessive. hawksmoor.ie OFF THE CUFFE BITTERS FROMAGE ET VIN The Wine Buff in Rathmines is well regarded for its deep and beautifully curated selection, sourced from small, mostly European producers who would normally be supplying their respective local markets, as well as the rich insight folks working there have for their wines. This month sees the shop hosting an event celebrating their French winemakers, with five wines included in the tasting menu, each paired with a delectable French cheese sourced through the equally revered Iciar Cheese Bar. At 7.30pm on March 14th, head down to the store and enjoy an evening of conversation, and discussion about the craft of winemaking, and the vineyards these continental tipples spring from. €43.87 @thewinebuffhq Off The Cuffe is an artisan bitters company, co-founded by Jarrod Cuffe in a little laboratory on Kings Inn Street in 2015. From there, the company has seen their handcrafted Irish bitters earn global recognition for an innovative approach to flavour and balance. All the more impressive for a few upstarts trying something interesting, particularly in a country that believes anything but a thimbleful of water in Whiskey is a sin. In 2019, Cuffe, along with Chris Hennessey, revived a 700 year old recipe regarded as the very source of whiskey in Ireland. This new tipple, Aqua Vitae, is the result of over three years of exhaustive research and translation, deciphering compound Latin to resurrect ancient flavours for modern palates. Jarrod was kind enough to share a recipe that you might like to try to get you over the close of the cold snap.
