ggest Beer Festival is Back Frozen cocktails have emerged as this summer’s unexpected stars, transforming how we enjoy peak-season fruits. While bartenders often infuse spirits with fresh produce to capture those fleeting flavours, a new trend has taken hold: freezing the leftover fruits and turning them into cocktail garnishes that do more than just look pretty. The frozen fruit acts like a granita, adding texture and, as it melts, deepening the drink’s flavour. This technique not only elevates the drink but also reduces waste, making the most of every bit of fresh produce. It’s been so popular that even Lidl has been slinging slushy machines with spicy frozé recipes. One of the city’s top beer fests is making a triumphant return at the RDS Main Arena, and it’s bringing over 50 breweries, including international guests from the USA, Canada, Hungary, and beyond. Publicans Call For Change Dublin publicans are fed up with the city’s lack of policing, with nearly all calling for more Garda presence. Willie Aherne, who runs The Palace Bar, is one of the 96% of pub owners demanding more Gardaí on the streets. He points out that while the Garda showed up after last November’s riots, the increased presence quickly fizzled out. He’s now urging the government to beef up police resources permanently, especially with tourists flocking to the city. The situation’s so bad half the pubs in Dublin have had to call Gardaí multiple times this year.
