This ancient tome was the pride and joy of Bishop Richard de Ledrede, who ruled over Kilkenny from 1316 to 1360. Known for its royal documents and legal info, the book’s red binding isn’t the only thing making it famous. Inside, it holds Ireland’s very first written account of distillation—aka the ‘First Drop’—and the first mention of “aqua vitae” (which you might know as whiskey). Distillation, brought to Ireland by monks in the 8th century, has become a cornerstone of Irish culture, and this old manuscript is a testament to that. It can now be viewed as part of a yearlong exhibition at St Canice’s Cathedral Kilkenny. Whelehan’s Wines have done it again with their “Exploration Thursdays”. These aren’t your average wine classes – they’re all about having the craic while learning. The first one kicks off on September 12th, from 7–9pm, with another on September 26th. Think Riesling, Sauvignon Blanc, Chardonnay, Pinot Noir, Cabernet Sauvignon, and Syrah/Shiraz. There’s only 14 spots per night, so snag your ticket early. It’s €49 for a night of wine, fun, and insights from Ireland’s top wine educators, Liam Campbell and Dale Gatcum.
