t mulls over the dubious prospect of getting rid of the Triple Lock, over at Jameson, they’re doubling down on it. Their Triple Triple Marsala Cask edition brings a taste of Sicilian magic to an Irish classic, using casks sourced from the renowned Florio Winery in Sicily. The hand-selected barrels are then seasoned with Marsala wine for two to three years, enabling the absorption of rich flavours including apricot, toffee apple, walnut and woodland spices. The emptied casks are then transported to Midleton Distillery in Cork where they are married with Jameson’s triple-distilled whiskey, resulting in a rich and full whiskey featuring notes of toffee apple, vanilla, and chocolate dipped walnuts, accompanied by notes of exotic fruits with a subtle hint of ginger spice. GLENDALOUGH DISTILLERY POT STILL PEATED IRISH WHISKEY Glendalough Distillery launched its latest innovation last month, a new limited-edition expression that builds on their steady legacy of re-imagining Irish spirits from the heart of the Wicklow Mountains. Made using both malted and unmalted barley, distilled in traditional copper pot stills, then aged for over seven years, the newcomer marries the traditional richness of Pot Still whiskey with the unexpected depth of peat smoke. The maturation process, which includes a four-year period in sustainably sourced Virgin Irish Oak from the forests of Wicklow, succeeds in imparting layers of rich vanilla, toasted oak, and warm spice. The subsequent introduction of peated malt adds a bold twist, blending delicate smokiness with the signature spice and creamy texture of the whiskey, culminating in a rich and memorable sipping experience.
