ITZWILLIAM O’MARO IRISH AMARO In a hat tip to the halcyon days when it first opened its doors in 1998 and rapidly forged a solid reputation for a great Bloody Mary, The Fitzwilliam Hotel has just concocted a brand-new menu that features five new variations on the global classic. Blending Irish ingredients and international inspiration with a hearty splash of flair, the gurus on Stephen’s Green are offering some hot new takes on the spicy, savoury cocktail beloved of booze hounds the world over. We’re especially loving their Bloody Irish Mary, featuring delicious iStil 38 Irish Vodka and Mic’s Chilli Inferno Sauce for an extra fiery kick. The native Irish twist comes topped with Achill Island Smoked Sea Salt, Dublin Bay prawns, and Irish pickles, in an experience its creators describe as “all about local flavour with a luxurious edge”. Other iterations include an invitation to ‘Build-Your-Own’, with those seeking out a cure or a pre-dinner pick-meup encouraged to get creative with some top-notch garnishes and spice levels. That said, at €17.50 per drink, we’d prefer to trust the mixing skills of their own Bartenders. They’re continuing to make good on that objective with O’Maro, their version of the classic bitter Italian digestif Amaro, which they’ve macerated using traditional methods featuring a unique blend of botanicals, including rosehip, strawberry leaf, lemon verbena and raspberries. The pioneering liqueur is to date the world’s only Irish Amaro, and while the Inchicore innovators say it’s great as a base for Negronis or added to Ginger Tea, we reckon it works just fine on its own.
