A Century in the Making Waterford Distillery is pulling whiskey from the pages of history with their latest release, Heritage: Goldthorpe. This little fella is made from a barley variety that hasn’t been used in whiskey production for over 100 years. Originally discovered in 1889, Goldthorpe barley was long forgotten until Waterford revived it, growing just enough to produce this limited release of 4,000 bottles. It’s a true throwback to the days when whiskey was as much about the grain as the cask. Priced at €131, this whiskey is about showcasing the craft and heritage that Waterford is known for.
